Cheryl’s Special Casserole


  • One rotisserie chicken
  • 3 cans diced green chilies
  • 1/8 cup taco seasoning
  • 2 1/4 cup salsa
  • 2 cups cooked white rice
  • One can black beans – drained
  • 1-2 cups of V-8 tomato juice
  • 2 cups grated cheese
  • Sour cream (optional)


Preheat oven to 350 degrees. Shred all chicken while warm. Place in pot. Add chilies, ¼ cup salsa, and taco seasoning. Cook on med heat approximately 20 minutes, until flavors are infused into meat. In a 9×13 baking dish, place beans on bottom. Pour V-8 over beans, just enough to cover the beans. Place rice on beans. Cover rice with remaining salsa. Place chicken mixture next. Cover with cheese. Bake for 30 to 45 minutes until warm. Serve sour cream on the side, along with any other fixings of your choice.
